Casa M Overnight Oats

ingredients

For the Oats:
  • 4 cups Silk coconut milk
  • 1/2 cup steel cut oats
  • 1/4 cup chia seeds
  • 1/4 cup flaxseed meal
  • 2 Tablespoons almond butter
  • 1/2 teaspoon Casa M Spice Co® Jerked Chain®
Pulling It All Together:
  • 1 banana, very ripe, mashed
  • 1 scoop greek yogurt
  • blueberries, blackberries, strawberries, etc.
  • roasted almond slivers

LET’S GET COOKING

  • 1.

    Put coconut milk into a thick bottomed heavy pot with a lid (uncovered initially). Bring the coconut milk to a boil.

  • 2.

    Add the almond butter first, mix well and dissolve while the coconut milk is heating. Once the almond butter is mixed in and the liquid is just starting to boil, add the oats, flaxseed meal, and chia seeds, mix well and let JUST return to a boil. Turn the heat off. Mix well again, cover the pot.

  • 3.

    Leave the mixture overnight covered.

  • 4.

    The next morning, mash the banana in with the oats, mix well, then serve in a bowl garnished with berries, Greek yogurt, and roasted almonds.

  • 5.

    Refrigerate immediately. This will last a week in the refrigerator (if it's not eaten before, but here, this barely lasts a day).
